An Unexpected Delight

I just have to share this recipe with you all. Chargrilled veggies on a bed of spinach leaves with a toasted hummus pita.

It’s so easy but seriously tasty and so so good for you. I was surprised at how good it was, and that is just testament to how great, simple food can blow your mind!

This makes 3 slices

What You’ll Need: 2 Wholemeal Pita breads, cut in half and toasted (I could manage 3 slices lol) hummus, 3 handfuls of spinach leaves, a medium carrot, half a medium zucchini, half a brown onion, 5 button mushrooms chopped, 3 cloves of garlic, a tablespoon of hot curry powder and a squeeze of lemon juice.

What You’ll Need to do:

Separate your spinach in to 3. Chop your veggies. Cut your pitas in half and pop in the toaster (don’t push it down yet though!) In a griddle pan heat 1 tablespoon of oil then add your veggies, not the spinach! Once they begin to brown sprinkle over the curry power, add a little salt and pepper if necessary and pop down the toaster. At this point your kitchen will smell amazing!

Once the pita has toasted, spread over a thick layer of hummus, lay the spinach on top then spoon equal amounts of the veggie mixture on top. Finish with a squeeze of lemon juice and enjoy the simplicity. For more veggie friendly recipes please follow Without_Cruelty on Instagram  ✌❀image
