Vegan Banana & Walnut Slices

This is a very basic banana cake recipe, made vegan. I usually make a loaf, a nice chunky banana brick, but unfortunately I didn’t have a loaf tin so it became a banana slice cake. Either way, it was awesome!

What You’ll Need:

2 large bananas, a large handful of chopped walnuts, 42g of melted vegan butter, 1/2 a cup of white sugar, 1 teaspoon of vanilla extract, 1 teaspoon of baΔ·ing soda, a tiny pinch of salt, 3/4 of a cup of plain flour.

What You’ll Need to do:

Pre heat the oven to 180 degrees and pop some grease proof paper in your desired baking tin. Mash the bananas, add the melted ‘butter’, stir in the sugar, add the vanilla, baking soda and salt and mix until smooth. Sieve the flour into the mixture and continue mixing until it becomes lump free. Throw in the chopped walnuts, mix a little bit more and transfer from the mixing bowl into the baking tray.

Bake for 25 minutes, leave to cool for about 15 minutes, cut into sqaures (or if you’re lucky enough to have used a loaf tin, leave whole) and serve. This recipe should serve 6 people. Or one very greedy person πŸ˜‰
