My Mexican Inspired Christmas continued last night with delicious, vegetable quesadillas aaand as they were so easy, quick and incredibly versatile I thought I would share the recipe with you all. This lead me to thinking that maybe I should share all of my ‘Mexican Christmas’ recipes, so I will be writing a post a day and showcasing a selection of tasty, vegan friendly, Mexican inspired, festive food! The veggies required for this dish are really up to you, I like to stick to veggies that are in season and cook quite quickly, but generally you can use what ever you have in the fridge. Last night I used:
1/4 Tin of Sweetcorn
Half a Tomato
1/4 Red Capsicum
1/4 Green Capsicum
Half a Large Zucchini
5 Cloves of Garlic
Half a White Onion
3 Tablespoons of Jalapeños in Vinegar
3 Dried Cayenne Peppers
A Sprinkle of Paprika.
You will also need 2 tortilla wraps per person
1/4 Jar of Kidney Beans
1/4 Tinned Tomatoes
Vego Friendy Butter to Grease the Wraps
Chop and fry all your veggies in a medium frying pan. Once everything is looking brown and golden add in your jalapeños, kidney beans, paprika and gradually spoon in your tinned tomatoes. You don’t want it to be too wet, so do this slowly so the liquid cooks down and thickens. All in all it’ll take around 20 minutes.
Once done, in a large pan, fry off some butter and place one of the tortillas in, fry for 30 seconds, then turn over and do the other side. Really quickly place half of the veggie mixture on to the centre of the tortilla, spread it out a little, put a little more butter around the edges, and place the other tortilla on top, using the butter to slightly stick the edges together. Flip the quesadilla over, cook for a further 2 minutes (watch it like a hawk and ensure it doesn’t burn!) then serve!
