Low Carb, Vegan, Channa Masala 

Sometimes I go low carb, this is one of those times….

When I’m trying to shed a few pounds and kick start my metabolism I like to go on the Eco Atkins diet plan. While embarking on this plan, I try to ensure I still incorporate foods that I like and enjoy into my meals. There’s nothing worse than having a lettuce leaf to look forward to after a long day!

So regular readers of my blog will know how much I love a good curry and tonight I have whipped one up that is super low calorie, pretty low carb and absolutely delicious! And the best thing is it takes a mere 15 minuts to make. You’ll be eating a curry in less time than it takes to watch an episode of New Girl! Woooo!!

Low Carb, Vegan, Channa Masala

Serves 1

200g Chickpeas, Drained

100g Tinned Tomatoes, diced

3 Chopped Cloves of Garlic

45g of Chopped Brown Onion

45g of Fresh Chopped Tomato

2 Tablespoons of Curry Powder

50ml of Water

In a frying pan cook down the onion, fresh tomato and garlic, once the garlic begins to brown and the onion turns translucent, sprinkle in the curry power and stir well. Add half the water, half the tinned tomatoes and all of the chickpeas. Mix well and let simmer for 5 minutes, the sauce should be beginning to thicken, once this happens add the remainder of the water and tomatoes, mix again and continue to simmer for a further 5 minutes. Taste, ensure the chickpeas are soft, add a little salt and pepper if necessary, or a little more curry powder if you wish, and serve. Resist the urge to serve with rice or naan if you are low carb-ing! Why not try a salad or some simple spinach leaves 🙂
