Hashtag: The Pantry Challenge

Over the past week I have been partaking in an online challenge called The Pantry Challenge and boy, it’s been a real eye opener! Originally devised by the beautiful Noémi Bélair on Instagram the aim is to appreciate and feel grateful for all you have and for all the abundance in your life. A simple way to do this is through food and by acknowledging what you put on your plate and in your belly each day. How many people have a fully stocked fridge, freezer or pantry but still venture off to the shops each day to buy more and more and more? That’s right, everybody! The challenge tries to instil a sense of minimalism, creativity and gratitude and by using the food you already have to make lovely, tasty, inventive meals it should also save you a tonne of cash! Whoop whoop! (There are a few exceptions to that rule, fresh fruit and veg and soya/nut milk.) Here’s an exert from Nems Insta page on what inspired her to do this…..

So, in an attempt to understand my privilege, to feel happy for all I have and to (lets be honest here) save money, I embarked upon this challenge…. And I have loved it! Not only am I freeing up space in my kitchen, making fun, different dishes, I’m building great friendships through social media. The support and the encouragement that my fellow pantry challenge partakers are offering is amazing and so warm! It’s been lovely to feel like part of an online community and if anyone reading this wants to join us, you too will be welcomed with open arms!

Here are a few snaps of what I have indulged in over the past week. Oh, and I’m all outta coffee, so I’ve been jacked up on tea all week….. yay…..

Birthday Lunch at my Mums House. I Brought a A Pack of Cous Cous and Tinned Dolmas that I’ve had for months and My Lovely Mum Provided the Rest

The Worlds Biggest Hummus and Salad Roll

Dinner was basically a repeat of lunch but with a few (squished) veggie fingers thrown in


I made a big bowl of veggies and rice for lunch

And made rice stuffed peppers for dinner 🙂


Saturday – we ate out. To celebrate my mums birthday properly, my family and I went to a gorgeous Turkish restaurant for lunch where I indulged in a stuffed eggplant and chips, it was delicious! And I didn’t need dinner! Check out Insta for the pic, and I’ll be blogging about it soon too!


Homemade Veggie Pizza

It’s truly amazing how many meals I have been able to create using only the ingredients I currently have! It’s like a real life episode of Ready Steady Cook! I’m so happy that I stumbled across this challenge and Nems Instagram page, it’s been a great week!     1. Hey, thanks for your comment 🙂 It’s a great way of appreciating everything we have and how easy things are to come by in our culture. We tend to shop on autopilot without realising what we actually need! Having done a little stock take of my freezer it’s become apparent I have 4 boxes of Linda McCartney Sausages ready to go!

  1. Wow, you did a great job! I do this periodically as well, sometimes just to challenge myself and other times it is because we are planning on traveling and I want to use up as much food in the pantry and fridge as possible. It doesn’t always go so smoothly but there have been occasions when I stumble upon a truly yummy new concoction 🙂

    1. Hey! Thanks for stopping by 😊 The Pantry Challenge is such a great way to clear out the clutter we all accumulate over time, my freezer is definitely feeling the positive effects of it! I’m pleased you do it too! Stumbling across new concoctions is awesome, it certainly makes you think twice and appreciate what you have 😊😘
