Low-Carb Bacon & Cheese Stuffed Mini Mushrooms (Vegan Friendly!) 

So, June has swiftly approached and we are already almost half way through 2017! That’s kinda scary guys! That also means that I’m on Day 3 of my Magnificent Mushroom Bonanza!!!

Today I have the perfect mushroomy breakfast treat for you, it’s light, packed full of protein and of course super fast to prepare. It’s a variation on a stuffed mushroom recipe I posted a few months ago, if you would like to check that out, click right here 🙂

This recipe calls for 150g of standard closed cup mushrooms, stalks removed, filled with goodies and baked for 15 minutes. You can get a little creative with your fillings, I’ve tried to keep things as low carb as possible and have found that spinach, tomato and veggie bacon are an absolute winning combination! With only 8g of carbs per serve and 138 calories, this really will keep you going until lunch time.

What You’ll Need

Serves 1

150g Closed Cup Mushrooms (Around 6 ‘Shrooms)

20g (Equal to about 1 rashers) V Bites Vegan Rashers

15g Fresh Spinach

1/2 A Tomato

20g Violife Vegan Pizza Cheese

A Teaspoon of Italian Seasoning

What You’ll Need to do

Preheat your oven to 200°. Wipe your mushrooms clean and remove the stalks.

Finely chop the stalks and the tomato and gently fry, after a few minutes add the spinach leaves and season with salt, pepper and a teaspoon of Italian seasoning.

Leave the veggie mixture to one side to cool and fry off your Veggie bacon, it takes 3 minutes to achieve the perfect crunch so while this is frying, grate your cheese and add in to the veggies. It should start to melt a little.

Once the bacon is done, cut it in to bite sized pieces, add to the veggie and cheese mixture, and stir well. Spoon the mixture into the mushrooms, piling it as high as it’ll go. Bake for 10 minutes, checking occasionally, don’t leave them in for longer than 15 as the mushrooms will being to dramatically reduce in size!

As I said these little bite sized treats are great for breakfast but can be enjoyed any time! A tasty starter, an afternoon snack or a fancy canapé.
